Mashing

In a brew kettle, heat 5 gallons of filtered water to 165°F (74°C). Add the pale malt, caramel malt, and wheat malt. Stir well and maintain the temperature at 150°F (65°C) for 60 minutes.

Sparging

After mashing, sparge the grains with hot water to collect about 6 gallons of wort in the kettle.

Boiling

Bring the wort to a boil. Add Citra hops at the start of the boil, Mosaic hops with 15 minutes left, and Simcoe hops during the last 5 minutes of the boil.

Cooling

Cool the wort quickly using a wort chiller until it reaches around 70°F (21°C). Transfer to a sanitized fermentation vessel.

Fermentation

Pitch the American ale yeast into the cooled wort. Seal the fermentation vessel and let it ferment at 68°F (20°C) for 1-2 weeks.

Adding Adjuncts

After fermentation is complete, add the pineapple puree, mango puree, and coconut extract. Stir gently to combine.

Bottling

Bottle the beer with priming sugar and let it carbonate for another 1-2 weeks before enjoying.
