Remove the bone-in filet medallions from the refrigerator and let them sit at room temperature for about 30 minutes to ensure even cooking.

Pat the medallions dry with paper towels. Season both sides generously with salt, black pepper, garlic powder, and chopped rosemary.

In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

Place the seasoned bone-in filet medallions in the skillet. Sear for about 4-5 minutes on one side until a golden-brown crust forms.

Flip the medallions over and add the butter to the skillet. Continue to cook for another 4-5 minutes, basting the medallions with the melted butter using a spoon.
