Cooking the Filet Mignon

Prepare the Steak

Remove the filet mignon from the refrigerator and let it sit at room temperature for 30 minutes. This helps in cooking evenly.

Season the Steak

Rub both sides of each filet mignon with olive oil, then season generously with salt and black pepper.

Preheat the Pan

Heat a cast-iron skillet or heavy pan over medium-high heat until very hot.

Sear the Steak

Place the filet mignon in the hot skillet and sear for 3-4 minutes on one side without moving it. Flip and sear the other side for 3-4 minutes for medium-rare.

Add Aromatics

In the last minute of cooking, add the crushed garlic cloves and fresh rosemary to the pan. Spoon the melted butter over the steak for added richness.

Remove the filet mignon from the skillet and let it rest on a plate for 5-10 minutes before serving. This allows the juices to redistribute.
