Preparing the Pasta

Cook the Penne Pasta

In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Cook the Andouille Sausage

In a large skillet over medium heat, add the andouille sausage. Cook for 5-7 minutes until browned and heated through. Remove from the skillet and set aside.

Cook the Shrimp

In the same skillet, add the tail-on shrimp. Season with Cajun seasoning and cook for 3-4 minutes on each side until they turn pink and are cooked through. Remove from skillet and set aside.

Add Roasted Chicken

Add the cooked roasted chicken to the skillet and heat for 2-3 minutes until warmed through.

Caramelize the Peppers and Onions

In the same skillet, add a tablespoon of butter and allow it to melt. Add sliced bell peppers and onion, cooking over medium heat for 8-10 minutes until caramelized. Stir occasionally to prevent burning.

Prepare the Cajun Alfredo Sauce

In a saucepan, melt the remaining butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese and Cajun seasoning, mixing until the cheese has melted and the sauce is smooth.

Combine Everything Together

In a large mixing bowl or pot, combine the cooked penne pasta, andouille sausage, shrimp, roasted chicken, caramelized peppers, and onions. Pour the Cajun Alfredo sauce over the mixture, tossing gently to coat all ingredients evenly.
