Prepare the Bacon or Sausage Patty

In a skillet over medium heat, cook the bacon or sausage patties until crispy and golden brown, about 3-4 minutes per side. Remove and set aside.

Cook the Eggs

In the same skillet, crack the eggs and cook sunny-side up or over-easy, seasoning with salt and black pepper to taste. Cook for about 2-3 minutes until the whites are set and yolks are still runny.

Toast the English Muffin

While the eggs are cooking, slice the English muffin in half and toast it until golden brown. Spread butter on each half while warm.

Assemble the Sandwich

On the bottom half of the toasted muffin, place a slice of cheese, followed by the cooked bacon or sausage patty, and then top with the cooked egg. Place the top half of the muffin on the sandwich.

Prepare the Potatoes

Wash and dice the potatoes into small cubes. Leave the skins on for added texture and flavor.

In a large skillet, heat olive oil over medium-high heat. Add the diced potatoes and season with paprika, garlic powder, salt, and black pepper. Stir to coat the potatoes evenly.

Fry the Potatoes

Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside.

Garnish and Serve

Once cooked, remove the potatoes from heat and sprinkle with fresh parsley for garnish. Serve alongside the breakfast sandwich.
