Johnny Cakes

Prepare the Batter

In a large bowl, mix cornmeal, flour, baking powder, and salt together. In another bowl, whisk together milk and eggs. Combine wet and dry ingredients until just mixed.

Cook the Johnny Cakes

Heat a skillet over medium heat and add 1 tablespoon of butter. Pour 1/4 cup of the batter into the skillet for each cake. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with remaining batter, adding more butter as needed.

Braised Greens

Prepare the Greens

Wash and chop the collard greens into bite-sized pieces. Set aside.

Cook the Greens

In a large pot, heat olive oil over medium heat. Add minced garlic and cook until fragrant. Add the chopped greens, vegetable broth, and red pepper flakes. Cover and simmer for 20-25 minutes, until greens are tender. Season with salt to taste.

Jalapeno Jam

Prepare the Jalapenos

Remove stems and seeds from jalapenos, then finely chop them.

Cook the Jam

In a saucepan, combine chopped jalapenos, sugar, and apple cider vinegar. Bring to a boil, then stir in pectin. Reduce heat and simmer for 10 minutes until thickened. Pour into sterilized jars and let cool.

Smoked Ham

Heat the Ham

In a skillet, heat the smoked ham slices over medium heat for about 2-3 minutes on each side until warmed through.

Poached Eggs

Prepare the Water

Fill a pot with water and bring to a gentle simmer. Add vinegar to the water.

Poach the Eggs

Crack each egg into a small bowl. Gently slide the eggs into the simmering water. Cook for about 3-4 minutes, until whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.

Hollandaise Sauce

Prepare the Sauce

In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water (double boiler setup) and whisk continuously until thickened.

Add Butter

Slowly drizzle in melted butter while whisking until the sauce is smooth and creamy. Season with salt to taste.
