Dough Preparation
Activate Yeast
In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
Make Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
Let Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Topping Preparation
Assemble and Cook Pizza
Preheat Wood-Fired Oven
Preheat your wood-fired oven to around 700°F (370°C).
Shape Dough
Once the dough has risen, punch it down and divide it into two portions. Shape each portion into a pizza base.
Add Sauce and Toppings
Spread tomato sauce evenly over the dough. Sprinkle mozzarella and parmesan cheese on top. Add cooked potatoes, scrambled eggs, bacon, sausage, and sautéed kale.
Bake Pizza
Transfer the pizza to the oven and bake for 5-7 minutes until the crust is golden and the cheese is bubbling.
Finish with Hollandaise
Remove the pizza from the oven and drizzle with hollandaise sauce. Sprinkle cracked black pepper on top.
Serve
Slice the pizza and serve hot.
