Crepe Preparation

Make the Crepe Batter

In a mixing bowl, combine all-purpose flour, milk, eggs, vanilla extract, and salt. Whisk until smooth and well combined.

Add Melted Butter

Stir in the melted butter until fully incorporated. Let the batter rest for about 30 minutes.

Cook the Crepes

Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of crepe batter into the skillet, tilting to spread it evenly. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for an additional 1 minute. Repeat with remaining batter.

Make the Whipped Butter

In a mixing bowl, beat the softened unsalted butter until creamy. Gradually add in demerara sugar and cinnamon, mixing until well combined and fluffy.

Assemble and Serve

Spread the whipped butter on the cooked crepes. Mix the additional demerara sugar and cinnamon together and sprinkle over the top. Roll or fold the crepes and serve warm.
