Dough Preparation

Combine Dry Ingredients

In a large bowl, whisk together the all-purpose flour, salt, sugar, and instant yeast until well combined.

Add Wet Ingredients

In a separate bowl, mix the warm milk, melted unsalted butter, and cold water. Gradually add this mixture to the dry ingredients, stirring until a rough dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape it into a ball.

First Rise

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise at room temperature for about 1 hour or until it has doubled in size.

Prepare the Butter Layer

While the dough is rising, place the cold unsalted butter between two sheets of parchment paper. Use a rolling pin to pound it into a rectangle about 1/2 inch thick. Refrigerate until needed.

Roll Out the Dough

Once the dough has risen, turn it onto a floured surface and roll it out into a rectangle approximately 16x12 inches.

Incorporate the Butter

Place the chilled butter rectangle in the center of the rolled-out dough. Fold the sides of the dough over the butter to encase it completely.

First Fold

Roll the dough out again into a long rectangle (about 24x10 inches). Fold it into thirds like a letter. Wrap it in plastic wrap and refrigerate for 30 minutes.

Second Fold

Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each fold.

Shaping and Baking

Shape the Croissants

After the final fold, roll the dough out to about 1/4 inch thickness. Cut it into triangles (about 5 inches wide at the base). Starting from the base of each triangle, roll it up toward the tip.

Proof the Croissants

Place the rolled croissants on a baking sheet lined with parchment paper. Cover them loosely with a kitchen towel and let them rise for another 1-2 hours until puffy.

Preheat Oven

Preheat your oven to 400°F (200°C) while the croissants are proofing.

Bake the Croissants

Once the croissants have risen, bake them in the preheated oven for 15-20 minutes or until golden brown and flaky.
