Method
Preparation
Infuse the Botanicals
In a large glass jar, combine the dried gentian root, dried wormwood, dried orange peel, dried chamomile flowers, and dried licorice root. Pour in 1 liter of high-proof neutral spirit until the herbs are completely submerged. Seal the jar tightly and let it sit in a dark, cool place for 2 weeks, shaking it gently every few days to mix the ingredients.
Finalizing the Amaro
Strain the Mixture
After 2 weeks, strain the infused spirit through a fine mesh strainer or cheesecloth into a clean container to remove all solid herbs and botanicals.
Combine with Water and Sweetener
In a separate container, mix the strained infusion with 1 liter of water and 500 ml of simple syrup. Stir well until fully combined.
Add Flavoring Agents
Add 2 tsp of vanilla extract, 1 cinnamon stick, and 5 cloves to the mixture. Let it steep for an additional 24 hours to enhance the flavors.
