Green Chile Chicken Stew

Sauté the vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.

Add chicken and broth

Add the diced chicken to the pot and cook until lightly browned. Pour in the chicken broth and bring to a simmer.

Add green chiles and spices

Stir in the diced green chiles, cumin, salt, and black pepper. Let simmer for about 20 minutes until chicken is cooked through.

Sauté the vegetables

In a large saucepan, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is soft.

Add tomatoes and broth

Add canned tomatoes and vegetable broth to the pan. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.

Blend and add cream

Use an immersion blender to puree the soup until smooth. Stir in the heavy cream, dried basil, salt, and black pepper. Heat through and serve.
