Prepare Tangerines

Wash and dry the fresh tangerines. Carefully peel the tangerines, avoiding the bitter white pith, and set the peels aside.

In a small bowl, mix together the brown sugar, ground cinnamon, ground nutmeg, ground ginger, and a pinch of salt. This will be used to enhance the flavor of the tangerines.
