Omelette Preparation

Whisk Eggs

In a mixing bowl, crack 3 eggs and add 2 tablespoons of milk, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until well combined and fluffy.

Sauté Vegetables

In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add 1 cup each of diced bell peppers, onions, and spinach, and sauté until they are soft and slightly caramelized, about 5-7 minutes.

Cook Omelette

Pour the egg mixture into the skillet with the sautéed vegetables. Cook until the edges are set, about 2-3 minutes. Sprinkle 1 cup of cheddar cheese on top. Carefully fold the omelette in half and cook for another 1-2 minutes until the cheese melts.

Mix Dry Ingredients

In a medium bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, 2 tablespoons of sugar, and a pinch of salt. Whisk until well blended.

Combine Wet Ingredients

In another bowl, whisk together 1 egg, 3 tablespoons of milk, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract.

Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.

Cook Waffles

Preheat a mini waffle maker and lightly grease it. Pour enough batter into the waffle maker to cover the surface and cook until golden brown, about 3-5 minutes. Repeat with remaining batter.
