Soaking the Beans

Rinse 2 cups of dried beans under cold running water to remove any debris. In a large bowl, cover the beans with 8 cups of water. Let them soak overnight, or for at least 6-8 hours to soften.

After soaking, drain the beans and rinse them again under cold water to remove any excess starch.

Cooking the Beans

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Adding Beans and Water

Add the soaked and drained beans to the pot. Pour in 8 cups of fresh water. Stir in 1 teaspoon of cumin powder, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Simmering

Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Let it simmer for 1 to 1.5 hours, or until the beans are tender. Stir occasionally and check the water level, adding more if necessary to keep the beans submerged.

Adding Cilantro

Once the beans are cooked, taste and adjust the seasoning if needed. If desired, stir in ½ cup of chopped cilantro for added freshness.
