Preparation
Prepare the Soda Base
In a large pitcher, combine the sparkling water and simple syrup. Stir gently to combine.
Make Blackberry Sage Flavor
In a blender, blend the fresh blackberries and sage leaves until smooth. Strain through a fine mesh sieve to remove seeds and solids. Add the blackberry sage concentrate to the soda base and stir well.
Make Orange Vanilla Flavor
In a separate pitcher, combine the fresh orange juice and vanilla extract. Mix well and then gently stir into the soda base.
Serving
Serve the house sodas over ice in tall glasses. Garnish with additional blackberries and sage leaves for the blackberry sage soda, or orange slices and a vanilla bean for the orange vanilla soda.
