Deviled Egg Filling

Method

Preparation

1

Boil the Eggs

Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 12 minutes.

2

Cool and Peel

Transfer the eggs to an ice bath for 5 minutes. Once cooled, peel the eggs and slice them in half lengthwise.

3

Prepare the Filling

Carefully remove the yolks and place them in a mixing bowl. Mash the yolks with a fork and mix in the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper until smooth.

4

Fill the Egg Whites

Spoon or pipe the yolk mixture back into the egg whites. Smooth the tops with a spatula.

5

Garnish and Serve

Sprinkle with paprika and garnish with fresh chives or parsley if desired. Serve immediately or refrigerate until ready to serve.
