Prepare the Ingredients

Start by gathering all the ingredients. Dice the onion and mince the garlic.

Sauté Onions and Garlic

In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes, until translucent. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Cured Tomatoes

Stir in the cured tomatoes and sauté for another 5 minutes, allowing the flavors to meld together.

Add Broth and Seasoning

Pour in the vegetable broth, and add salt and black pepper. Bring the mixture to a boil.

Simmer the Soup

Once boiling, reduce the heat to low and let the soup simmer for 20 minutes. This will allow the flavors to intensify.

Blend the Soup

After simmering, remove the pot from heat. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a countertop blender.

Add Basil Pesto

Return the blended soup to the pot over low heat. Stir in the basil pesto and warm through.

Serve

Ladle the soup into bowls and garnish with fresh basil leaves if desired. Serve warm.
