Calamari Preparation

Clean the Calamari

Rinse the fresh calamari under cold water. Remove the head and innards, and peel off the outer skin. Cut the calamari into rings or leave them whole if preferred.

Prepare the Coating

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well until evenly combined.

Soak the Calamari

In a separate bowl, pour the buttermilk over the cleaned calamari. Allow it to soak for at least 30 minutes. This will tenderize the calamari and enhance its flavor.

Heat the Oil

In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Coat the Calamari

Remove the calamari from the buttermilk, allowing excess liquid to drip off. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.

Fry the Calamari

Once the oil is hot, carefully add the coated calamari in small batches to the oil. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain them on paper towels.
