Prepare the Beef

In a mixing bowl, divide the ground beef into two equal portions (8 oz each). Do not overwork the meat.

Season the Patties

Sprinkle each portion with kosher salt and black pepper on both sides.

Special Sauce

Make the Sauce

In a small bowl, combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, garlic powder, and onion powder. Mix well until smooth. Taste and adjust seasoning if necessary.

Cooking the Burgers

Preheat the Griddle

Heat a cast-iron skillet or a griddle over medium-high heat until it is very hot.

Cook the Patties

Place the beef portions on the hot skillet. Using a sturdy spatula, smash each portion down flat to about 1/2 inch thick. Cook for 2-3 minutes until a crust forms, then flip and immediately place a slice of American cheese on each patty. Cook for another 1-2 minutes until the cheese melts.

Toast the Buns

While the patties are cooking, you can toast the burger buns on the griddle until golden brown.

Build the Burger

Spread a generous amount of special sauce on the bottom half of each toasted bun. Place a cheesy patty on top, followed by shredded lettuce and sliced pickles. Finish with the top half of the bun.
