Make sweet tea

Bring 4 cups of the filtered water to a near boil in a medium pot. Remove from heat, add the cane sugar and stir until fully dissolved. Add the black tea (and green tea if using). Cover and steep for 10–15 minutes.

Strain the tea leaves or remove tea bags and discard. Pour the sweet tea into a clean 1–2 gallon glass jar. Add the remaining 10 cups of cool filtered water to bring the temperature down. The liquid should be room temperature or slightly warm (below 85°F / 29°C) before adding starter.

Once the sweet tea is at room temperature, add 2 cups of unflavored starter kombucha and gently place the SCOBY on top of the liquid. Cover the jar with a tightly woven cloth or coffee filter and secure with a rubber band. Place the jar in a warm, dark spot (68–78°F / 20–26°C) out of direct sunlight for primary fermentation.

Primary ferment for 7–10 days. After 7 days, begin tasting daily with a clean straw: when the tea has a balance of tangy (slightly vinegary) and sweet to your liking, it's ready for bottling and flavoring.

Prepare hibiscus infusion

While primary fermentation finishes, make a concentrated hibiscus infusion: bring 1 cup filtered water to a boil, remove from heat and add 2 tablespoons dried hibiscus petals. Steep 10 minutes. Strain into a heatproof container. While still warm, stir in 1 teaspoon dried butterfly pea flower, then let sit 5 minutes to develop color. Strain again, discarding solids. You should have roughly 1 cup of deep pinkish-red liquid that may shift color slightly when lemon is added.

Combine flavor components

Stir the fresh lemon juice and the optional 2 teaspoons honey (or agave) into the hibiscus infusion until combined. Taste and adjust: it should be pleasantly tart with a hint of floral sweetness. Chill to room temperature if still warm.

Set out clean flip-top bottles and add 1–2 thin lemon slices and a couple of mint leaves to each bottle for aroma and presentation.

When the kombucha base is ready, remove the SCOBY with clean hands and set it with about 1–2 cups of the fermented kombucha (reserve as starter for the next batch). Strain the fermented kombucha into a pitcher or large measuring cup, discarding any large particles.

For each 12–16 oz (360–475 ml) bottle, add 2–3 tablespoons of the hibiscus-lemon concentrate. Pour the kombucha base into each bottle, leaving 1–2 inches headspace. Seal the bottles tightly. The hibiscus + lemon will react with the kombucha acidity to produce a vivid, slightly changing color (Aqua ViTea’s signature effect) and a lightly effervescent finish.

Bottling & Finishing

Second ferment: leave bottles at room temperature out of direct sunlight for 24–72 hours to build carbonation. Check pressure daily by gently opening one bottle to release excess gas. For milder fizz, 24–36 hours; for strong carbonation, up to 72 hours but burp more often to prevent over-pressurization.

After desired carbonation is reached, transfer bottles to the refrigerator to slow fermentation. Chill at least 12 hours before serving. The cold will also help any remaining sediment settle.

Serve cold. Gently invert the bottle once to mix flavors, pour into glasses including lemon slice and mint if used. Note: the butterfly pea and hibiscus create a vibrant color that can shift toward purple when lemon (acid) is present—this is normal and part of the Aqua ViTea experience.

Reserve 1–2 cups of the finished kombucha (before flavoring) plus the SCOBY as starter for your next batch.
