Chorizo Breakfast Wrap

In a small bowl, whisk together the unsweetened cocoa powder, granulated sugar, and a pinch of fine sea salt. This prevents lumps when added to the liquids.

Combine dry ingredients

Pour the whole milk and heavy cream into a medium saucepan. Warm over medium-low heat until steam rises and small bubbles form around the edges, about 4–6 minutes. Do not boil.

Warm the milk and cream

Whisk the cocoa-sugar mixture into the warmed milk in a steady stream, whisking constantly to dissolve and avoid clumps. Continue to heat for 1–2 minutes until well combined and hot but not boiling.

Incorporate dry mixture

Reduce heat to low. Chop the semisweet chocolate into small pieces (if not already chips) and add to the saucepan. Stir constantly until the chocolate is fully melted and the mixture is smooth, about 2–3 minutes.

Add chocolate

Remove the saucepan from the heat. Stir in the vanilla extract and adjust sweetness or salt to taste. If you want a spicier profile, whisk in the cayenne pepper here (start with a small pinch).

Finish and flavor

Ladle the hot chocolate into four mugs (about 1 cup each). Top each serving with a dollop of whipped cream and a small handful of mini marshmallows, or use either topping alone.

Sprinkle each cup with chocolate shavings and a light dusting of ground cinnamon, if desired. Serve immediately while hot.

Leftovers: Cool to room temperature, transfer to an airtight container and refrigerate up to 3 days. Rewarm gently on the stovetop over low heat, whisking to recombine; add a splash of milk if too thick.

Weigh 36 g (0.036 kg) of whole coffee beans. This yields about two 8-oz (240 ml) cups of brewed coffee at a 1:14 ratio (coffee:water). Adjust quantity proportionally for more or fewer servings.

Measure beans

Bring 500 ml of filtered water to just off boil (about 93–96°C). If you don't have a thermometer, bring to a boil and let sit 30 seconds before pouring.

Heat water

Grind the beans immediately before brewing. Use a medium-coarse grind for pour-over or drip (similar to sea salt), coarser for French press, and fine for espresso. Aim for consistency: a burr grinder gives the best result.

If using a paper filter, place it in the dripper and rinse with hot water to remove paper flavor and preheat the brewer. Discard rinse water. Add the ground coffee, level gently. Pour ~60 ml hot water evenly over grounds to saturate (bloom) and let sit 30–45 seconds to release CO2.

Continue pouring the remaining hot water slowly and evenly over the grounds (for pour-over) until you reach the total water weight (500 ml). For drip machines, start the brew cycle. For French press, pour all hot water, stir gently, place the lid with plunger up, and steep 4 minutes before plunging. For espresso, follow your machine's dosing and extraction time (typically 25–30 seconds). Total contact time: pour-over ~2.5–3.5 minutes; French press ~4 minutes; drip varies by machine.

Brew

Once brewed, pour the coffee into cups immediately to prevent over-extraction from sitting on the grounds. Taste plain black first to assess strength and flavor.

Serve

If desired, warm 60 ml milk or cream (optional) briefly on the stove or microwave to around 60°C and pour into coffee. For latte or cappuccino, steam the milk to create microfoam and combine with espresso (if making espresso-based drink).

Stir in sugar (1 tbs) or sweetener (1 tsp) to taste. A tiny pinch (0.25 tsp) of salt can reduce bitterness if desired. Adjust amounts to your preference.

Sweeten or season

Discard used grounds and rinse equipment. If you rinsed a paper filter earlier, dispose of it. Wash and dry the brewer, carafe, and tools to preserve flavor for next brew.

Combine 1 cup water and 3 tablespoons granulated sugar in a small saucepan. Warm over medium heat, stirring constantly, just until the sugar dissolves and the liquid is clear (do not boil). Remove from heat and let the syrup cool to room temperature (about 10–15 minutes).

Make the simple syrup

While the syrup cools, roll and press whole lemons on the counter to loosen juices. Cut enough lemons to yield 1 cup fresh lemon juice (about 4–6 medium lemons). Strain the juice through a fine mesh sieve into a measuring cup to remove seeds and excess pulp.

Juice the lemons

In a large pitcher (at least 2 quart), pour the cooled simple syrup and the 1 cup fresh lemon juice. Add 3 cups cold water and stir thoroughly. Taste and adjust: if too sweet, add up to 1/2 cup more water; if too tart, stir in 1–2 tablespoons more sugar dissolved in a little warm water or additional simple syrup.

Combine and dilute

Add 2 cups of ice cubes to the pitcher or fill individual glasses with ice. Pour the prepared lemonade over ice.

Garnish each glass with a lemon slice and a mint sprig if using. Sprinkle 1 teaspoon lemon zest into the pitcher or over individual glasses for extra fragrance, if desired.

Serve immediately. Stir occasionally while serving to keep flavors uniform; store any leftover lemonade refrigerated in a sealed container for up to 3 days.

Bring 4 cups of the filtered water to a near boil in a medium pot. Remove from heat, add the cane sugar and stir until fully dissolved. Add the black tea (and green tea if using). Cover and steep for 10–15 minutes.

Make sweet tea

Strain the tea leaves or remove tea bags and discard. Pour the sweet tea into a clean 1–2 gallon glass jar. Add the remaining 10 cups of cool filtered water to bring the temperature down. The liquid should be room temperature or slightly warm (below 85°F / 29°C) before adding starter.

Once the sweet tea is at room temperature, add 2 cups of unflavored starter kombucha and gently place the SCOBY on top of the liquid. Cover the jar with a tightly woven cloth or coffee filter and secure with a rubber band. Place the jar in a warm, dark spot (68–78°F / 20–26°C) out of direct sunlight for primary fermentation.

Primary ferment for 7–10 days. After 7 days, begin tasting daily with a clean straw: when the tea has a balance of tangy (slightly vinegary) and sweet to your liking, it's ready for bottling and flavoring.

While primary fermentation finishes, make a concentrated hibiscus infusion: bring 1 cup filtered water to a boil, remove from heat and add 2 tablespoons dried hibiscus petals. Steep 10 minutes. Strain into a heatproof container. While still warm, stir in 1 teaspoon dried butterfly pea flower, then let sit 5 minutes to develop color. Strain again, discarding solids. You should have roughly 1 cup of deep pinkish-red liquid that may shift color slightly when lemon is added.

Prepare hibiscus infusion

Stir the fresh lemon juice and the optional 2 teaspoons honey (or agave) into the hibiscus infusion until combined. Taste and adjust: it should be pleasantly tart with a hint of floral sweetness. Chill to room temperature if still warm.

Combine flavor components

Set out clean flip-top bottles and add 1–2 thin lemon slices and a couple of mint leaves to each bottle for aroma and presentation.

When the kombucha base is ready, remove the SCOBY with clean hands and set it with about 1–2 cups of the fermented kombucha (reserve as starter for the next batch). Strain the fermented kombucha into a pitcher or large measuring cup, discarding any large particles.

For each 12–16 oz (360–475 ml) bottle, add 2–3 tablespoons of the hibiscus-lemon concentrate. Pour the kombucha base into each bottle, leaving 1–2 inches headspace. Seal the bottles tightly. The hibiscus + lemon will react with the kombucha acidity to produce a vivid, slightly changing color (Aqua ViTea’s signature effect) and a lightly effervescent finish.

Second ferment: leave bottles at room temperature out of direct sunlight for 24–72 hours to build carbonation. Check pressure daily by gently opening one bottle to release excess gas. For milder fizz, 24–36 hours; for strong carbonation, up to 72 hours but burp more often to prevent over-pressurization.

After desired carbonation is reached, transfer bottles to the refrigerator to slow fermentation. Chill at least 12 hours before serving. The cold will also help any remaining sediment settle.

Serve cold. Gently invert the bottle once to mix flavors, pour into glasses including lemon slice and mint if used. Note: the butterfly pea and hibiscus create a vibrant color that can shift toward purple when lemon (acid) is present—this is normal and part of the Aqua ViTea experience.

Chill a rocks or coupe glass by filling with ice and setting aside. In a cocktail shaker add gin (or vodka), fresh lemon juice, simple syrup, and egg white if using. Do a dry shake (no ice) vigorously for 15 seconds to emulsify and create froth.

Add the cup of ice to the shaker and shake hard for 10–15 seconds until the shaker feels very cold. This both chills and dilutes the mixture properly.

Discard ice from the chilled serving glass. Double-strain the cocktail into the glass over a large ice cube (or serve neat in a coupe if preferred). Gently pour chilled club soda or sparkling water (about 2 oz) down the side so it keeps some effervescence. Do not vigorously stir; a gentle swirl or two is enough to incorporate.

Add 2 dashes of Angostura bitters on top of the foam (if using egg white) or on the surface to add aroma and a touch of bitterness. Garnish with a lemon wheel or a lemon twist on the rim. Serve immediately.

If using a reusable bottle, wash it thoroughly with warm, soapy water, rinse well, and let air-dry or dry with a clean towel. If using a store-bought sealed bottle, inspect the seal to ensure it is intact.

Prepare bottle

Pour the spring or purified water into the clean bottle. For a standard serving use 1 liter; adjust quantity proportionally for different bottle sizes. Leave a small air gap at the top (about 1–2 cm) if using a reusable bottle to allow for expansion and easier pouring.

Fill bottle

If you prefer cold water, add the ice cubes to the bottle or place the filled bottle in the refrigerator for at least 30 minutes. Do not add ice to glass bottles that are cold-shocked (e.g., from freezer) to avoid cracking.

Optional chilling

If desired, add the lemon slice to the bottle for a subtle citrus note. Gently swirl the bottle to distribute flavor; allow to infuse for 2–5 minutes for a mild taste, or longer for stronger flavor.

Close the bottle tightly with its cap. Serve immediately if chilled, or store in a cool, dark place or refrigerator. Consume within 24–48 hours if opened to ensure freshness; unopened commercial bottled water can be stored according to supplier guidelines.

Place flutes or coupe glasses in the refrigerator or freezer for 10–15 minutes before serving to keep the drink cold longer.

If you prefer pulp-free orange juice, strain freshly squeezed orange juice through a fine mesh sieve into a pitcher and chill.

Decide which base you want: orange juice (classic) or apple cider (seasonal). For each serving, plan about 1/2 cup (120 ml) chilled sparkling wine and 1/2 cup (120 ml) juice/cider. This recipe quantities are for 2 servings (1 cup sparkling + 1 cup juice).

Measure

Divide the chilled orange juice or chilled apple cider evenly between the prepared glasses, filling each flute about halfway (approximately 1/2 cup per glass).

Pour Juice/Cider

Slowly pour the chilled Champagne or sparkling wine down the side of each glass to top up. Pour gently to preserve carbonation and avoid foaming over. Aim for roughly equal proportions of juice and sparkling wine.

Top with Bubbles

Do not stir after adding the sparkling wine; the bubbles will naturally mix the drink and stirring can flatten the bubbles.

If desired, garnish each glass with an orange slice on the rim for orange mimosas or a thin apple slice for cider mimosas. Optionally drop a fresh berry into the glass for color.

Serve immediately while sparkling wine is still effervescent.

Measure and brew enough strong coffee to yield 1 cup (approx. 12 oz water for drip or follow your device's ratio). Use freshly ground beans and brew immediately before serving so the coffee is hot and aromatic.

Preheat the mug if desired by rinsing it with hot water, then discard the rinse water. This helps keep the drink warm longer.

Pour 2 tablespoons of Bailey's Irish Cream into the preheated mug. If you prefer sweeter coffee, add 1 teaspoon granulated sugar or 1 teaspoon simple syrup now.

Slowly pour the freshly brewed hot coffee into the mug over the Bailey's, filling to about 1 cup total. Stir gently with a spoon to combine the liqueur and coffee evenly.

If using, spoon or pipe about 2 tablespoons of hot whipped cream on top of the coffee. Lightly dust with a pinch (about 1 teaspoon) of ground nutmeg or cocoa powder for aroma and presentation.

Top and garnish

Taste and adjust: if you want it creamier or boozier, add another 1 tablespoon Bailey's and stir. If too strong, add a splash (1–2 tablespoons) of hot water or milk and stir.

Rinse the mug and stirring spoon promptly to prevent sugary residue from hardening. Wash equipment per manufacturer's instructions.
