Prepare Glasses
Chill
Place flutes or coupe glasses in the refrigerator or freezer for 10–15 minutes before serving to keep the drink cold longer.
If you prefer pulp-free orange juice, strain freshly squeezed orange juice through a fine mesh sieve into a pitcher and chill.
Mix Drinks
Measure
Decide which base you want: orange juice (classic) or apple cider (seasonal). For each serving, plan about 1/2 cup (120 ml) chilled sparkling wine and 1/2 cup (120 ml) juice/cider. This recipe quantities are for 2 servings (1 cup sparkling + 1 cup juice).
Pour Juice/Cider
Divide the chilled orange juice or chilled apple cider evenly between the prepared glasses, filling each flute about halfway (approximately 1/2 cup per glass).
Top with Bubbles
Slowly pour the chilled Champagne or sparkling wine down the side of each glass to top up. Pour gently to preserve carbonation and avoid foaming over. Aim for roughly equal proportions of juice and sparkling wine.
Do Not Stir
Do not stir after adding the sparkling wine; the bubbles will naturally mix the drink and stirring can flatten the bubbles.
