Prepare and dry shake

Chill a rocks or coupe glass by filling with ice and setting aside. In a cocktail shaker add gin (or vodka), fresh lemon juice, simple syrup, and egg white if using. Do a dry shake (no ice) vigorously for 15 seconds to emulsify and create froth.

Shake with ice

Add the cup of ice to the shaker and shake hard for 10–15 seconds until the shaker feels very cold. This both chills and dilutes the mixture properly.

Strain and top with soda

Discard ice from the chilled serving glass. Double-strain the cocktail into the glass over a large ice cube (or serve neat in a coupe if preferred). Gently pour chilled club soda or sparkling water (about 2 oz) down the side so it keeps some effervescence. Do not vigorously stir; a gentle swirl or two is enough to incorporate.

Finish and garnish

Add 2 dashes of Angostura bitters on top of the foam (if using egg white) or on the surface to add aroma and a touch of bitterness. Garnish with a lemon wheel or a lemon twist on the rim. Serve immediately.
