Method
Prepare Bacon
Cook
Preheat oven to 400°F (200°C). Arrange bacon slices in a single layer on a rimmed baking sheet lined with foil and a rack if available. Bake 12–18 minutes depending on thickness until crisp. Alternatively, cook bacon in a skillet over medium heat 6–10 minutes, turning, until crisp. Transfer to a paper towel–lined plate to drain and cool. When cool, break each slice in half if desired for easier wrapping.
Make Avocado Ranch
Combine
In a small bowl, mash 1/2 ripe avocado until mostly smooth. Add mayonnaise, Greek yogurt, and buttermilk and whisk until combined and slightly loose in consistency. Stir in chopped chives and parsley, garlic powder, dried dill, lemon juice, salt, and black pepper. Taste and adjust seasoning; add a splash more buttermilk for a thinner dressing or more lemon for brightness. If you like a little heat, stir in crushed red pepper to taste.

Slice
Core and slice the tomato into 1/4-inch thick slices. Slice the remaining half avocado (if you used half for the dressing) into thin slices. If you used only 1/2 for the dressing, you should have the other half for slicing; if not, use the whole avocado as directed earlier. Rinse and spin or pat dry the mixed greens so they are crisp and not wet.
Warm Tortillas
Assemble Wraps
Lay a warmed tortilla flat. Spread about 1.5 tablespoons of avocado ranch in the center, leaving a 1-inch border. Layer 2 ounces (about 2 slices) of deli turkey on top of the dressing, followed by two halves of cooked bacon (or 1–2 full slices broken), a small handful (about 1 cup) of mixed greens, 2–3 tomato slices, and 3–4 avocado slices if available. Season tomato and avocado lightly with a pinch of salt and a grind of black pepper.
Fold the sides of the tortilla in toward the center, then tightly roll from the bottom up to form a compact wrap. If packing for later, wrap each tightly in parchment or foil to hold shape. For an immediate serve, slice each wrap diagonally in half with a sharp knife and secure with a toothpick if needed.
Serve
Serve the wraps immediately while bacon is still warm for best contrast between warm bacon and cool greens. Provide extra avocado ranch on the side for dipping.
