Prepare the Glasses
Chill your champagne flutes in the refrigerator for about 15 minutes before serving to ensure your mimosa is refreshing.
Juice the Grapefruit
Cut the grapefruit in half and use a citrus juicer to extract 1 cup of fresh grapefruit juice. Strain it if you prefer a smoother texture.
Mix the Mimosa
In a mixing pitcher, combine the fresh grapefruit juice and simple syrup. Stir gently to mix.
Pour the Ingredients
Remove the chilled champagne flutes from the refrigerator. Pour about 1/3 cup of the grapefruit mixture into each flute.
Add Champagne
Slowly top off each glass with approximately 1/2 cup of champagne or sparkling wine. Pour gently to avoid too much fizz.
