Preparing the Grouper

Season the Fish

In a bowl, coat the grouper cheeks with jerk spice, ensuring each piece is evenly covered. Let marinate for at least 30 minutes.

Cook the Grouper

Heat a grill or skillet over medium-high heat. Add a small amount of oil to the pan. Cook the seasoned grouper cheeks for about 3-4 minutes on each side or until they are cooked through and flaky. Remove from heat and let cool slightly.

Combine Ingredients

In a mixing bowl, combine mayonnaise, Dijon mustard, capers, chopped cornichons, chopped parsley, and chopped hard-boiled eggs.

Slice the Hawaiian rolls in half and lightly toast them if desired.
