Method
Crust
Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
Bake the Crust
Bake the crust in the preheated oven for 10 minutes, then remove from the oven and let it cool while preparing the filling.
Cheesecake Filling
Make the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar and mix until combined. Then mix in the sour cream, vanilla extract, and flour until smooth.
Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
Pour and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven at 325°F (165°C) for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and crack the oven door to let the cheesecake cool gradually for 1 hour.
Chill the Cheesecake
After cooling in the oven, refrigerate the cheesecake for at least 4 hours or overnight to set completely.
Berry Compote
Cool the Compote
Remove from heat and let the berry compote cool before serving. You can refrigerate it for later use.
