Marinate the Salmon

In a bowl, mix together olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

In a saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Grill the Salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. Remove from the grill and let it rest for a few minutes.

Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced zucchini, bell pepper, and red onion. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
