Farro Sabayon

Preparation

Cook the Farro

In a medium saucepan, bring the vegetable broth to a boil. Add the farro and cook for about 25-30 minutes, or until tender. Drain any excess liquid and set aside.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the minced garlic and diced shallots, sautéing until fragrant and translucent. Add the sweet corn and cook for another 5 minutes.

Prepare the Sabayon

In a heatproof bowl, whisk together egg yolks and white wine. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture is thick and creamy.

Combine Everything

Fold the cooked farro into the sautéed vegetables. Gradually mix in the sabayon, then add grated Parmesan cheese, sunflower seeds, salt, and pepper. Stir gently to combine.

Serve

Serve warm as a hearty side dish or a light main course.
