Prepare the Rice

In a medium saucepan, combine the Arborio rice and water. Bring to a boil over medium-high heat, then reduce to low. Cover and simmer for about 15-20 minutes or until the rice is tender and has absorbed most of the water.

Add Milk and Condensed Milk

Once the rice is cooked, add the milk, sweetened condensed milk, sugar, and a pinch of salt to the saucepan. Stir well to combine.

Add Cinnamon and Simmer

Add the cinnamon stick to the mixture. Cook over low heat, stirring frequently, for about 15-20 minutes, until the mixture thickens and achieves a creamy consistency.

Finish with Vanilla and Ground Cinnamon

Remove the saucepan from heat and discard the cinnamon stick. Stir in the vanilla extract and ground cinnamon to the rice pudding.

Serve

Spoon the Arroz Doce into serving dishes. You can serve it warm or chilled, and garnish with a sprinkle of ground cinnamon on top before serving.
