Cocktail Preparation
Prepare the Blackberry-Sage Simple Syrup
In a small saucepan, combine equal parts sugar and water, add fresh blackberries and sage leaves. Heat over medium until the sugar dissolves, then let steep for 30 minutes. Strain and cool.
Mix the Cocktail
In a cocktail shaker, muddle fresh mint leaves and blackberries. Add Lewis & Clark gin, lemon juice, lime juice, and blackberry-sage simple syrup. Fill the shaker with ice and shake vigorously until well chilled.
Serve
Strain the mixture into a glass filled with ice. Top with soda water and garnish with additional mint leaves and blackberries.
