Pat the NY strip steaks dry with paper towels. Season both sides with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for about 4–5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest.

Prepare Crispy Onions

Slice the large onion into thin rings. In a bowl, soak the onion rings in buttermilk for about 30 minutes. In another bowl, combine flour and salt. Heat vegetable oil in a deep skillet. Dredge the onion rings in the flour mixture and fry in batches until golden brown and crispy, about 2-3 minutes. Drain on paper towels.

Blue Cheese Sauce

Make the Blue Cheese Sauce

In a bowl, combine blue cheese, sour cream, mayonnaise, garlic powder, and lemon juice. Mix until smooth and creamy. Adjust seasoning if necessary.
