Fountain Affogato

In a saucepan, add 2 cups of water and bring to a boil over medium heat.

Boil Water

Once the water is boiling, add 2 tsp of black tea leaves to the boiling water. Allow it to simmer for about 2 minutes.

Add Tea Leaves

Add the grated ginger, crushed cardamom pods, cinnamon stick, cloves, and black peppercorns to the boiling tea mixture. Stir well and let it simmer for another 5 minutes, allowing the spices to infuse.

Incorporate Spices

After 5 minutes, strain the tea into a separate pot or a teapot to remove the tea leaves and spices.

Add 2 tsp of sugar and 1 cup of milk to the strained tea. Stir well and heat the mixture gently until it is hot but not boiling.

In a large mixing bowl, combine the heavy cream, whole milk, granulated sugar, and vanilla extract. Use a whisk to mix until the sugar is completely dissolved and the mixture is smooth.

Mix the Base

Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours, or until it is thoroughly chilled.

Chill the Mixture

Divide the chilled base mixture into three equal parts in separate bowls.

Prepare the Flavors

To the first bowl, stir in the chocolate syrup until well combined. In the second bowl, mix in the strawberry puree until fully incorporated. In the third bowl, fold in the crushed Oreos gently.

Add Flavors

Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency, approximately 20-25 minutes per flavor.

In a large mixing bowl, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Whisk together until the sugar is fully dissolved and the mixture is smooth.

Mix the Ingredients

Cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours to chill. This helps improve the texture of the ice cream.

Once chilled, pour the mixture into an ice cream maker. Churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, usually about 20-25 minutes.

Transfer the churned ice cream into an airtight container and freeze for at least 4 hours or until firm.

While the ice cream is freezing, prepare the toppings. In individual serving bowls, set out chocolate syrup, chopped nuts, whipped cream, and maraschino cherries.

Preheat your oven to 350°F (175°C) to ensure it is hot enough for baking.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

In a separate bowl, mix the milk, vegetable oil, and egg. Add the vanilla extract and whisk until smooth.

Pour the wet ingredients into the dry ingredient mixture and stir until just combined. Be careful not to overmix; a few lumps are okay.

Gently fold in the chocolate chips until evenly distributed throughout the batter.

Grease a baking pan (9x9 inches recommended) with cooking spray or butter to prevent sticking.

In a large brew kettle, heat 5 gallons of filtered water to 165°F (73°C). Add the crushed Pale Malt, Caramel Malt, and Wheat Malt, stirring well to avoid clumps. Maintain the temperature at 152°F (67°C) for 60 minutes.

Mash the Grains

After mashing, sparge the grains with an additional 5 gallons of water heated to 170°F (77°C) to extract the sugars. Collect the liquid, known as wort.

Bring the wort to a rolling boil. Once boiling, add the Citra Hops and boil for 60 minutes.

With 15 minutes left in the boil, add the Mosaic Hops and Galaxy Hops for flavor and aroma.

At the end of the boil, turn off the heat and add the orange peel and coriander. Stir well.

Add Adjuncts

Use a wort chiller or an ice bath to cool the wort quickly to around 68°F (20°C).

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast. Seal with an airlock.

Allow the beer to ferment at around 68°F (20°C) for 1-2 weeks, until fermentation is complete.

Once fermentation is complete, sanitize your bottles and caps. Prepare a priming solution if bottling.

Transfer the beer from the fermenter to the bottles, leaving about 1 inch of headspace at the top of each bottle. Cap the bottles securely.

Let the bottles condition at room temperature for 1-2 weeks before chilling and enjoying your Hazy IPA.

Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter until the mixture resembles wet sand.

Prepare the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove and let cool.

Form the Crust

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the sugar and continue to beat until well combined.

Add the sour cream and vanilla extract to the mixture and mix until smooth.

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Pour the cheesecake filling over the cooled crust in the springform pan.

Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggles when shaken. Turn off the oven and leave the cheesecake inside for 1 hour.

Remove the cheesecake from the oven and let it cool at room temperature for 30 minutes. Then refrigerate for at least 4 hours or overnight.

In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently to coat. Let sit for about 15 minutes to allow the strawberries to release their juices.
